The Depot at Dietrick Begins a $6.5 Million RenovationThe days of traditional cafeteria lines will soon be gone. Renovation has begun to transform the Depot at Dietrick, located in the upper level of Dietrick Dining Center, from a traditional cafeteria-style dining center into an international marketplace restaurant by fall 2004. The $6.5 million renovation will provide customers with the best of both worlds: one price all-you-care-to-eat dining with the option to purchase premium grill items for a nominal fee. The new design will have specialty shops that feature international and American favorites. "This project has been awaiting funding approval for four years, and we are excited that construction has finally begun," said Ted Faulkner, associate director for dining services. "The traditional serving lines will be eliminated and replaced with internationally themed venues, similar to West End Market." Eight dining venues will feature Asian, Mexican, Italian, Brazilian, and Mediterranean style cuisine and cooking techniques, along with a deli, an all-American salad bar, and dessert area. The Mediterranean venue will offer an expanded vegan and vegetarian menu. The Brazilian style grill or "churrascaria," will feature a variety of roasted and grilled meats, as well as fast fare items. According to Faulkner, the design for the facility was created based on input provided by customers through comment cards, annual satisfaction surveys, and student advisory committees. West End Market's success also led to the open kitchen shop concept. "Although the new Dietrick will have an entire new look, the dining center will still maintain one price, all-you-care-to-eat," said Faulkner. Culinary staff are currently working on developing menus for each shop. New menu items are being featured daily during lunch on line two.
