In response to the recent sanitation inspection of the facility identified above, the following action plan has been developed

820 Cut melons and sliced tomatoes cold holding at improper temperatures. Melons are under prep and tomatoes are cold holding. PHF's in use during assembly and production are to be placed on top of a container of ice to ensure it remains at proper holding temperatures during the production phase.  Change implemented immediately. 9/21/2009 Don Harvey
1780 Equipment - Food Contact Services and Utensils Equipment used for storage of packaged or open food items was observed with visible accumulation of soil and debris. Yogurt cooler interior soiled. Cooler cleaned after inspection and added to nightly cleaning list.  9/21/2009  Anne Spangler
3180 Cleaning Frequency and Restrictions Floor and shelving along front line in need of cleaning. Cleaning these areas added to nightly cleaning list. Work order request placed for shelf to be replaced to allow for better cleaning. 9/21/2009  Anne Spangler
Training Plan: Training with back of the house employees on keeping PHF's in temp during production.
