In response to the recent sanitation inspection of the facility identified above, the following action plan has been developed
Code Section Violation/Comment Corrective Action Date Manager
820 Critical Violation.  Observation (Corrected During Inspection): Smoothie mix cold holding at improper temperatures. Product discarded.  Refrigerator labeled "Mechanical Failure-Do Not Use". Work order entered. New product stored in a different cooler until this one can be repaired. 9/11/2009 Tom Fong
850 Critical Violation.  Observed (Corrected During Inspection): Tuna Garden Salad for which time rather than temperature is being used as a control was not labeled or  otherwise marked with a 4 hour cook, serve or discard by time. Product was discarded since it wasn't recorded on the HACCP log when it was made. Employee counseled for displaying product without approved time mark.  Supervisor directed to complete additional training on the importance of marking every product as it is displayed. 9/11/2009 Tom Fong
Training Plan: Document that all employees understand the importance of all products displayed in Refcon units MUST have a time mark that is supported by our HACCP tracking.
