In response to the recent sanitation inspection of the facility identified above, the following action plan has been developed

820 A Critical. Corrected during Inspection: Sliced eggs and humus clod holding at improper temperatures during prep Eggs and humus discarded.  These recipes will be assembled in the cooler from this point forward. 8/24/2009 Nona Gabbert
1770 A Critical. Corrected during Inspection: The following utensils were observed soiled to sight and touch: Food contact ladles. Tongs, etc.  Soiled utensils found in clean container storage.  Items were in storage and not in production flow, but should have been cleaned before being stored.  Items cleaned and sanitized where possible and discarded if not cleanable. 8/24/2009 Nona Gabbert
570 Non-Critical. Cloth-Wiping Cloths Observed improperly stored between use. Complete a documented training on the proper use and storage of cloth towels.  When wet they can only be stored in a properly labeled sanitizer bucket with sanitizer at 200PPM. 8/25/2009 Nona Gabbert
790 Non-Critical. Improper method used to thaw poultry. Running water at 75° F. Running water method should not have been used in this case and will not be used in the future for thawing poultry. 8/24/2009 Nona Gabbert
1080 Non-Critical.  The Chopper handle pin is not designed and constructed to be durable.  Pin held in place with electrical wire. This piece of equipment is not used or needed.  It will be stored out of the kitchen or surplused. 9/1/2009 Nona Gabbert
1780 E Non-Critical.  The surfaces of the ice scoop holder was in contact with non-potentially hazardous food items that were observed soiled with accumulations of grime and debris. Ice scoop holder must be mounted in such a way that it can be easily removed to be regularly cleaned and sanitized.  Work order placed in TMA system today. 9/1/2009 Nona Gabbert
2790 Non-Critical. The indoor ceiling material located at dry storage room does not meet the standard of:1. Smooth, durable and easily cleanable. 2. Nonabsorbent.  Clean pans stored under perorated ceiling panels Clean pans moved to a room designated by Health Inspector as acceptable. 8/24/2009 Nona Gabbert
