In response to the recent sanitation inspection of the facility identified above, the following action plan has been developed

820 A Critical. Corrected during Inspection: Cantaloupe cold holding at improper temperature. Relocate food to a refrigeration unit capable of maintaining food storage at 41° F or below.   Cantaloupe less than 4 hours old was placed in the blast chiller. Final temp 39° F.  This recipe will be assembled in the cooler from this point forward. 8/24/2009 Nona Gabbert
1770 C Non-Critical. Corrected during Inspection: Observed accumulations of dust, dirt, food residue, or other debris on the following nonfood-food contact surfaces: Counter under pizza hot hold unit and the hot hold unit. Maintain nonfood-contact surfaces of equipment clean. Schedule weekly detail cleaning for the pizza warmer. 8/24/2009 Nona Gabbert
3180 Physical Facilities - Cleaning Frequency and restrictions.  Corrected during Inspection.  Floors under and adjacent to the pizza oven noted in need of cleaning. Schedule weekly cleaning of floor under pizza oven, especially around the legs.  Insure staff has proper tools needed for this cleaning to include scrapers to reach hard to reach areas. 8/25/2009 Nona Gabbert
